Spinach-stuffed Tomatoes
serves 4
Ingredients
4 ea medium tomatoes
20 oz frozen spinach, thawed and squeezed dry
1/2 C pine nuts
1/4 C safflower oil
2 ea medium onions, chopped
2 cl garlic, minced
1/8 t nutmeg
1 1/2 t basil
Options
sausage, browned
mushrooms, sauteed
Instructions
Sauté the pine nuts in 1/4 C oil until golden, stir in the onions and garlic, then sauté 1 to 2 minutes. Add the rest of the oil, spinach, nutmeg, season to taste, then remove from heat.
Cut the tops from the tomatoes, hollow out each and drain well. Sprinkle inside of each with salt, pepper and basil, then fill with the spinach mixture.
Sprinkle with oil, then bake at 350 for 15 minutes.
Plate and serve.
